Our Story

For almost 20 years, Robertson Farms has been growing hot peppers and turning them into some of the finest hot sauces this side of New Orleans. Based In Hershey Pennsylvania, Robertson Farms is making Hershey famous for something other than chocolate.

All the peppers used in Robertson Farms hot sauces are naturally grown here on the Farm. The day the peppers are harvested, they are shredded, salted and begin the fermentation process. We use no pesticides and our pepper plants are fertilized with our own compost, composted manure, fish meal and seaweed.

Our recipe is simple: once the peppers are harvested and shredded, they are salted and placed in glass jars to begin the fermentation process. A vinegar/brine solution may be added to the jars to top them off, if necessary. We then let Mother Nature and her minions, the Lactobacilli yeasts that occur naturally in the air around Robertson Farms, take over. After about 3-5 weeks, the peppers are at their sour and salty peak, ready for processing into hot sauce.

Because we only use peppers we grow here on the Farm and make our hot sauces by hand in small batches, you may often find them unavailable. When a season’s sauces are gone, they are gone.

We enjoy entertaining family and friends here on the Farm and  often we are asked for recipes that we serve to our guests. We started to put them on our Robertson Farms blog to share them more easily with family, friends and anyone else. We even put our hot sauce recipe on the website and encourage anyone to try growing their own peppers and making their own hot sauce.
