I&nbsp;reverse engineered this from two restaurants.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>The vodka sauce is from Mario and Luigi\u2019s in State College, one of my favorite places to eat while in Happy Valley.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>At Al Mediterraneo in Hummelstown (sadly no longer in business), I had a dish that seemed to combine the vodka sauce with salmon and penne pasta.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>I tried it at home and voila!<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>I have no idea what role the vodka plays in this.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>I asked the chef at Mario and Luigi\u2019s and he swears it gives it a nice spicy bite.<span style=\"mso-spacerun: yes;\">&nbsp; <\/span>If nothing more, it\u2019s a great conversation starter!<\/span><\/div>\n<p><\/span><span style=\"font-family: Verdana, sans-serif;\"><\/span><\/p>\n<div style=\"margin: 0in 0in 0pt; text-align: left;\"><\/div>\n<p><span style=\"font-family: Verdana, sans-serif;\"><\/span><span style=\"font-family: Verdana, sans-serif;\"><\/span><\/p>\n<div style=\"margin: 0in 0in 0pt; <\/span>You can stand 2 ounces of cream once in a while!<span style=\"mso-spacerun: yes;\">&nbsp; <\/span>And everything else in this dish is super healthy, from the salmon to the olive oil.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>So it kind of cancels the cream.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Live a little!<o:p><\/o:p><\/span><\/div>\n<div style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Verdana, sans-serif;\"><br \/><\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">\u00be to 1 lb. salmon filet, bones removed<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">\u00bc cup olive oil<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">4 garlic cloves, crushed and minced<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">1 medium onion, diced<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">\u00bd tsp. dried, crushed red peppers<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">2 oz. vodka<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">1lb. 10 oz. can Italian plum tomatoes, chopped, with juice<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">1 bay leaf<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">\u00bd pint heavy cream<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">12 oz. penne pasta<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt 0.5in;\"><span style=\"font-family: Verdana, sans-serif;\">1 T. chopped parley<\/span><\/div>\n<div style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Verdana, sans-serif;\"><br \/><\/span><\/div>\n<div style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Verdana, sans-serif;\">Preheat olive oil in 10\u201d saut\u00e9 pan over medium heat.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Add onions and saute until soft, add garlic and stir for a couple more minutes.&nbsp;Add the dried red peppers and&nbsp;deglaze with the vodka.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Continue stirring and add the tomatoes and bay leaf.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Stir well; reduce to a slow simmer and cover.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Simmer covered for about 45 minutes or an hour, stirring occasionally.<span style=\"mso-spacerun: yes;\">&nbsp; <\/span><\/span><\/div>\n<div style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Verdana, sans-serif;\"><br \/><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/2.bp.blogspot.com\/-WLr5o44lL_I\/T1wCx3AOFWI\/AAAAAAAAAHg\/3K7JoiaIfyk\/s1600\/IMG_1890.JPG\" style=\"margin-left: 1em; margin-right: 1em;\"><span style=\"font-family: Verdana, sans-serif;\"><\/span><\/a><\/div>\n<div style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Verdana, sans-serif;\">When the sauce is close to done, wash the salmon in cold running water and check for bones by running your finger down the center of the fleshy side.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Cook the filet by bushing with olive oil and placing on a grill, skin-side down, on medium-high heat.<span style=\"mso-spacerun: yes;\">&nbsp; <\/span>After about five minutes, turn the filet flesh-side down and carefully remove the skin and discard.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Cook for about another five minutes.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>The flesh should just begin to separate with a fork when it\u2019s done.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>Don\u2019t overcook.<span style=\"mso-spacerun: yes;\">&nbsp;<\/span>You can also cook the salmon by pan frying in a couple of tablespoons of olive oil.<o:p><\/o:p><\/span><\/div>\n<div style=\"clear: both;
